Bartender's Tip: Feed it dry, hard ice cubes rather than wet or partially-melted ice. Wet ice gums up the blades and bunches into clumps instead of crushing cleanly. If you're prepping crushed ice for a busy service, crush it 15 to 20 minutes ahead and store it in a Cambro in the freezer; freshly crushed ice weeps enough water in the first few minutes to thin a julep or mojito served immediately. Adjust the grind dial from fine to coarse with the unit empty. Forcing the dial under load will dull the blades.
